Estofado is from the Spanish word estofar and “stew” in English which means to slow-cook vegetables and meat in liquid in a closed pan.

Saba (Plantains) are a good source of fiber and Vitamin C. It is also known to be a source of Vitamin B6 that can reduce cardiovascular risk. It is also rich in antioxidants that may reduce the risk of many diseases.

PORK ESTOFADO
Ingredients:

1 kg pork belly
2 pcs kamote (sweet potato)
3 pcs saba (sweet plantain)
1 pc carrot
1 bulb garlic
1 pc white onion
2 pcs dried bay leaves
3 Tbsp soy sauce
2 Tbsp cane vinegar
1 Tbsp muscovado or brown sugar
pork chorizo
warm water
black pepper to taste
