Today I am going to share with you Mediterranean homemade “Kuboos or Khubz Bread” which is a flat bread, commonly available round in shape. In this video, I cooked this bread without using oven method also known as stovetop, but you can cook with any way you like. This bread can paired with any middle-eastern dipping such as hummus, labhen, muhammara, baba ghanouj and so. You can also use this bread for shawarma roll, stuff with falafels, barbecue chicken or fajitas fillings.

Ingredients
– All-purpose Flour (or wheat flour) 4 cups (sifted)
– Warm water 1/4 cup
– Active dry yeast 1 packet
– Whole egg 1
– Oil 3-4 tbsp
– Warm milk 1/4 cup
– Salt as needed
– Sugar 2 tsp

Directions
– In a large bowl, whisk salt, sugar, yeast with water. Allow to sit for 10 minutes then add warm milk, oil, one whole egg and whisk together.
– Combine flour with silicone or wood spatula use water as needed while kneading. Further knead dough with hands for 5-7 minutes until form a consistent dough. Grease dough with oil and cover it with lid or a damp towel. Allow to rest for an hour or dough double in size.
– Once dough has risen, insert a soft piece of butter in and mix gently in dough. This will help dough get more soft and spongy. To make this process easier, remove dough from bowl and place on working surface. Punch down gently to combine butter in dough. Shape dough into three fold then roll upside towards the bottom like a round ball. Pinch both sides to seal the edges. Rest dough for 20-30 minutes.
– Once dough is rested, divide dough into 8 equal parts and shape dough into small balls. Place all the small balls on lightly dusted surface and covered with damp cloth.
– Place a small dough ball on working area and roll it with rolling pin, flatten them into a round chapati like 8” in diameter. Repeat same steps for all the other dough balls.
– Heat a griddle pan on medium-high heat, place pita bread on pan, let the bubbles appear on top, then flip over, wait for few seconds to cook other sides, press using spatula to puffs up. Cook from both sides until nice golden brown color then remove from heat and place on plate with covered a cloth to keeping it warm.
– For oven method, preheat oven on 480F, once oven temperature set, place rolled khubz bread on lined sheet pan. Start broiler on high temperature, place your tray in the oven on top rack (make sure not too close with the broiler) and bake for 30 seconds then carefully flip the other side and cook another 30 seconds to a minute or until bread puffs up and charred marks appears. Repeat same steps for rest of the dough.
– Enjoy with hummus, muhammara or any other Mediterranean dips.
