  1. Cast iron and carbon steel pans have replaced all of the crap pans I’ve been using for years. They work perfectly, you can use and abuse them but you can’t hurt them. Plus I’m not eating poison when I cook.

  2. The ceramic non-stick instructions include directions on seasoning or polymerizing oil into the surface of the pan. This can be done on stainless steel or cast iron to make them 'non-stick'. -Just don't wash them with detergent unless you want to re-season them.  To review these pans is a waste of our time. It's a shame that cooks and chefs in general know so little about care and maintenance of equipment.
