Thank you for finally demonstrating exactly what ‘against the grain’ means in slicing, I never knew.
I do wish that you had used multiple cuts of meat. It is not always so easy to see. I watch a lot of cooking competition shows, and I have seen multiple highly skilled,professional chefs cut with the grain, by accident.
