Chicken Pasta with Tomato Cream Sauce

Ingredients:

400g penne pasta
400g boneless, skinless chicken breast, cut into small pieces
2 tablespoons olive oil
2 onions, diced
40g garlic, minced
700ml can of pureed tomatoes
250ml cooking cream
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon black pepper
3/4 teaspoon salt
Fresh basil, chopped, for garnish

Instructions:
1. Cook pasta according to package instructions until al dente. Drain and set aside.
2. Season chicken pieces with salt and pepper.
3. In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook for 4-5 minutes or until browned on both sides. Remove chicken from the pan and set aside.
4. In the same pan, add onion and garlic and cook until softened, about 3-4 minutes.
5. Add pureed tomatoes, heavy cream, salt, oregano, and basil to the pan. Stir to combine and bring to a simmer.
6. Return chicken to the pan and continue to simmer for 2-3 minutes or until the sauce has thickened.
7. Serve the chicken and sauce over cooked pasta and garnish with grated parmesan and fresh basil.
