Ingredients:
1.5 tsp activated yeast
4 tsp sugar
2 tsp vinegar
3 cups of water (110°F) ≈ 710 milliliters
2 tsp salt
6 cups of flour (approximate values)
All-purpose flour: Approximately 720-750 grams
Bread flour: Approximately 780-810 grams
The flour measurements can vary slightly depending on the type of flour and how it’s packed.
Instructions:
Activate the yeast by combining it with sugar, vinegar, and warm water. Let it sit for 10 minutes until frothy.
In a large mixing bowl, add salt and flour. Mix well to combine.
Pour the activated yeast mixture into the bowl with the dry ingredients. Mix until all the flour is incorporated and no dry patches remain.
Cover the bowl with a cloth and let the dough rest for 2 hours, allowing it to rise and develop flavors.
Fold in all sides of the dough to release any excess air and enhance the structure.
Proof the dough for an additional 1 hour, giving it time to rise and develop a nice texture.
Add lots of flour on the board to prevent it from sticking. Be sure to add extra flour on your hands so it’s easier to shape the dough.
Preheat the Dutch oven to 450°F (230°C) while the dough proofs.
Carefully transfer the dough into the preheated Dutch oven, ensuring it is evenly shaped.
Cover the Dutch oven with the lid and bake the bread for 40 minutes.
After 40 minutes, remove the lid and parchment paper (if used) and continue baking for an extra 3 to 5 minutes to achieve a beautiful golden crust.
Once baked, remove the bread from the Dutch oven and let it cool on a wire rack before slicing.

I made this bread excellent but why doesn’t ny bread have all the holes in it, mine was tighter crumb, did i do something wrong?
What does 3 cups of water mean? A typical cup is 250 ml, so you pour 750 ml of water, it does not match the amount of yeast. It is best to give in grams.The recipe is not suitable
Great looking loaf. Must say, this is the first time I have seen anyone use vinegar in a bread recipe. Wonder what the benefits of the vinegar are? I have been baking a while, but mostly sourdough.

what is vinegar used for !
I now make this bread every weekend. Now I do knead the dough every 30 mins throughout the 3 hours of sitting. I think it makes the bread more light.
I have tried numerous no knead bread recipes but looks like yours came out the best

Oh my goodness!!! When I was working with this dough I said to myself “ain’t no way!” Well I was wrong. This is the best Artisan loaf I have ever made. The dough was so loose I finally dumped it on the parchment paper and put it into the DO. When I opened the vessel after 40 minutes I was in total shock. Where can I upload a picture??
I came back to say after many weeks of using this recipe (and many many other0 fails), this is a winner. I have a beautiful bread in front of me, which i wish i could share the image. I use only 1 teaspoon of apple cider vinegar and 2 teaspoons of coconut sugar. In case someone wants to cut down. I do the first hour counter rise and then pull/shape with the spatula. Then i put it in the fridge overnight. I didnt try 2 days yet, but in the morning, i pull with the spatula and dump on a floured board and shape it while the pot is heating. Then i pop it in when its hot and bake 40 minutes to perfection, according to the recipe. So i just cut down a bit on the vinegar and sugar and did an overnight rise. It's amazing. Thank you.

I wanted a quick loaf and am just trying it out. Of course, 850 grams flour makes a huge loaf and I do not think 45 minutes will be enough – I will probably give it 55 minutes baking time. I usually bake with sour dough and 12- 24 hours proofing time. However, I am out of bread and wanted something quick for an emergency. I am interested to see how it works out. Our flour here in Germany is a bit different to American flour but that is easily adjusted – I needed a bit more water. I assume the vinegar is to emulate sour dough. I used apple vinegar. I shall complete this tonight, when I have baked the loaf!
Well, it just came out of the oven and is swesome. Smells delicious and looks terrific. I had added an extra hour to the folding priocess (2 x 1 hour), We have many different flour grades, so I used a mixture of white 550 plus wheat 1600 (close to wholemeal) and a tiny bit of soya flour for extra protein and color. The entire quantity of flour remained the same as your resipe. I made 2 loaves and they turned out perfect. 2 smaller loaves can have a better rise too. One for eating, one fro freezing. My time was 45 minutes at 220°C.
Thank you for an awesome resipe that can be changed in so many ways. Much quicker than the 1-2 days waiting with sourdough, yet just as tasty.
