My grandmother made a great beet salad with chopped celery, onion, hardboiled egg, and dressed with mayo.
Couldn't you use buttermilk instead of egg when dredging?

I love my toaster oven. I use it more than my oven. I have the Breville Smart Oven with proofing and dehydrating. I love it.
For tne catfish, if you've caught it yourself, let it live in a large pool/tub of clean water for several days. Clean out daily so it doesn't re_eat the dirt, once the water is clear after a day, then safe to eat the fish. Long process but if you really want to get rid of the dirty,muddy tastse. I saw this on some food show years ago it was done at a commercial facility.

IF you want to puree something to change the texture, not the vegetable as such, puree when it is already cooked and has combined with the other flavours. That way you will not intensify the flavour as you would when pureing them raw.
Good egg-free coatings are pakora batter or beer batter.
Greek yogurt is good to use as a substitute for eggs on chicken. It's a good marinade too.

As for mayo and eggs allergy – most of the times You're allergic to albumin (whites) not yolk so mayo is usually safe. Yolk very rarely cause allergic response.

Wild caught cat fish are bottom feeders and have a mud streak that must be removed or cleaned out. Farm raised are mainly grain fed and pretty clean.
And can you recommend a roasting rack that won’t scratch the enamel on my new le creuset roasting pan?
