@TeakPhillips asked us on Twitter: “Would freezer burned chicken parts impact the flavor of stock?”
The test cooks at America’s Test Kitchen answer your cooking questions straight from the kitchen.
To ask a question, tweet us @TestKitchen or ask us on Facebook:
Due to the high volume of questions, we are not able to answer every single one. We try our best, but the test cooks have to get back to testing recipes!
America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

7 wk? Um, not the average length of freezer burn, I imagine. I'm thinking years, not weeks.
pretty severe mixed messaging here but got the information i needed despite that. “don’t hesitate” vs “this is not a green light” is a bit of a mismatch yeah?
Awesome video!
a long brining really helped ,had to remove skin though .
Wow. Thanks for the great follow-up. This is way more than I expected.
