I havent tried this one. Yet. The Chili Colorado is now one of my favs. I've made it four or five times already.
I was on a job in Lemitar New Mexico and there was a restaurant called the coyote Moon Café. They serve some really good green chili stew. I don’t think they there anymore but I’m gonna have to try your version. It sure looks like it’s a good one. Thank you.

Americas test kitchen on pbs did an onion test. There’s not any difference between a yeller and white onion according to their test.
I like to roast a few nopales with my chiles then dice them up and add them to the stew with the pork and "salsa verde".

I make a very similar dish but use ground pork and pork tenderloin cut into cubes instead of shredded. No matter what your recipe, you can't go wrong with tomatilos, onion, and peppers!

Chile verde is so good. My dad would make this so spicy I couldnt eat it. We never ate this as a stew but with beans and rice.
