Avocado pasta recipe

Ingredients:
– 12 oz (340 g) pasta (spaghetti, fettuccine, or your choice)
– 1 ripe avocado, pitted and peeled
– 1 cup fresh basil leaves
– 1/4 cup pine nuts or walnuts
– 1/4 cup grated Parmesan cheese (optional for a vegan version)
– 1/4 cup olive oil
– 1/4 cup pesto sauce
– Juice of 1 lemon
– Salt and pepper to taste

Instructions:
– Bring a large pot of salted water to a boil.
– Add the pasta and cook according to the package instructions until al dente.
– Drain the pasta, reserving 1/2 cup of the pasta cooking water, and set aside.
– Combine the avocado, basil leaves, pine nuts (or walnuts), Parmesan cheese (if using),pesto sauce lemon juice, and olive oil.
– Blend until smooth.
– If the mixture is too thick, add a bit of the reserved pasta cooking water, one tablespoon at a time, until you reach the desired consistency.
– Season with salt and pepper to taste.
– In a large bowl, toss the cooked pasta with the sauce until evenly coated.
– Transfer the pasta to serving plates.
– Garnish with halved cherry tomatoes and fresh basil leaves if desired.
– Serve immediately and enjoy!
