I did a suckling pig last year for a clients birthday party. I essentially did a cochinita pibil, but because I didn't have a way to get the pig from the pibil in my back yard to the restaurant while still hot, I essentially did it Beggar's Chicken style. I'm still SUPER proud of that one, and very seriously, I have you to thank for the inspiration to pull it off. Thanks for your content Jon. I'm a better chef because of it.
