It’s a lot easier to eat when it’s called lengua lol. I’ve enjoyed it many times off of taco trucks in Houston, though those days are behind me. I’m willing to give it a go if I can find it locally! Definitely not a heavy cut, goes well with onion, cilantro, and an extra-spicy salsa! That said it’s gotta be a reasonable price. Beef shank here is $5.99/lb which is ok, but oxtail is $7.99. Ridiculous!!!

Still think boiling is OK with lengua to remove skin, then finish exactly like brisket on the smoker with oak. But sous vide looks amazing too, will have to try 🙌🏽

Gelatin and potato starch gives the best creamy mouth feel for salsas and a few other things. Play with your food and figure it out.
