Smoked shrimp enchiladas. Add some fresh onion, diced tomatoes and shredded lettuce.
Try adding some diced black olives in there as well topping with those and onions.

Not sure what you should 'enchilada' next, but you should try some pulled pork tamales…maybe even some brisket tamales, or smoked chicken tamales. Basically anything tamale.
