This BBQ Fig pizza is so simple and will please all of the fig lovers out there! Canada’s Favourite Female Grill Masters, Maddie & Kiki, show you how to make this simple yet TASTY pizza, and cooking it on a gas grill makes it a super quick weekday meal idea!
Cast Iron Fig & Caramelized Onion Pizza
Makes 1 pizza
Prep Time: 1 hour (rising time) 15 minutes minutes
Grill Time: 45 minutes
Total Time: 2 hours
Ingredients:
For the dough:
2 cups all purpose flour
1 tsp salt
1 cup warm water
1 heaping tsp yeast
1 heaping tsp maple syrup
For the pizza:
One large onion, finely sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
227g (8oz) fresh black figs, sliced in half
1 cup plant-based (or regular) soft cheese (I used a spicy imitation goat cheese!)
Black pepper to taste
For garnish: arugula, sprouts, or chives, hot maple syrup
Directions:
To make the dough, combine the water with the yeast and honey (or maple syrup) and allow to bloom for 10 minutes. Add the salt the the flour, and mix well. Then add the yeast/water mixture, and knead until a soft dough forms. Lightly oil a bowl, and toss the dough around in it. Cover with plastic wrap or a kitchen towel, and put in a warm place for 1 hour.
Meanwhile, cook the onions over medium high heat in the olive oil for 15 minutes, until lightly browned. Season to taste. Deglaze with the balsamic vinegar. Set aside.
Lightly oil a cast iron skillet. Spread the dough out in the skillet, and use your fingers to create a crust against the sides of the cast iron. Top with the cheese, then the onions, and the figs. Add black pepper to taste.
Preheat grill (or oven) to 375 degrees Fahrenheit. Grill (or bake) pizza over indirect heat for 45 minutes, until lightly browned. Allow to cool in the skillet for 10 minutes before removing and fully cooling on a wire rack. Just before serving, top with hot honey (optional) and sprouts, arugula or chives.

So, growing up on the classic NYC slice, I'll say this is not pizza. But, it's a damn great focaccia! There's always fig jam in my fridge, so I love the flavor. Carmelized onions are the best, fresh black figs wrapped in prosciutto, and roasted, are one of the best snacks ever. (Sorry Kiki… I still love you) Damn nice job here. But for the love of all things holy, no pineapple 🤣

My first part time job while still in high school was working in a bakery. My friends asked me how I liked it, I told them I was making a lot of dough. I love figs but they are not on my diet at this time. That fig ers. 😂

I love figs. My mom used to make a fig appy during the Holidays. So good. I love making dough. When i was a kid I used to go catfishing and carp fishing with dough. More great memories for me. I gotta tell you, i never thought about doing this type of recipes in a cast iron. Now my wheels are spinning. Last night I had a Pancetta & Fig Flatbread (crispy pancetta, fig spread, ricotta & blue cheese, slivered almonds, arugula, tomato, balsamic drizzle) So good. I order this at least 2 times a month! Awesome job girls. I'll be getting some sort of cast iron pizza on film soon.
