This might just be the best burger I’ve ever eaten. It’s so basic, but this is proof you don’t need to mess about too much to create incredible tasting food. Don’t worry, the full recipe is down below. The key to this recipe is to get the best quality, minced beef your budget will allow. I like to serve my simply with onion, ketchup and mustard, and whilst my Mrs loves gherkins as far as I’m concerned, they can get in the bin. BBQ Smash Burgers (serves 4)

600g beef mince
8 slices processed cheese
½ onion very finely diced
Yellow mustard
Tomato Ketchup
Gherkins if you like the horrible things
4 toasted brioche buns

Method:

1: Heat a cast-iron skillet or flat top over the flames of your barbecue until screaming hot. Divide the beef mince into eight equal sized balls weighing 75g each. Place the balls onto the flat top and use something heavy to smash down into a thin patty. Season with salt and pepper then once the burger has had time to form a crust, flip it over, then lay on a slice of cheese. Stack two of the patties on top of each other then pop on the bun lid. Dress the base of the bun with onion, ketchup, mustard and some gherkins, if you can stand them then place the patty stack on top.
