Beef Back Ribs are one of the most economical and delicious cuts of meat that you can smoke. I used to shy away from this cut as I thought of it simply as the underside of a whole rib roast. AKA the leftovers from a prime rib. Once I changed my perspective and thought of this huge rack of beef ribs like the Fred Flintstone version of pork ribs, my mind was changed. In this video we treat this rack of beef ribs like a rack of pork ribs saucing them in the end of the cook and it is delicious.

I picked some of these up today for the first time to see what I could do with them. Of course I’ve gotta check out meat church for the tea and turns out this was posted 3 days ago. Go figure lol
Beef Ribs and Miller lite!!! Can’t get any better
The prices did go up. We cook the Costco beef back ribs with Traeger Prime Rib Rub, 225F no-wrap. Since they are off the rib roast it was only logical to try them with Prime Rib Rub. Since we don't wrap, the membrane is crispy and tasty.
Have you done a show on side dishes?
Sweet Jesus Matt! I just finished eating these using post oak as well. OMG! They were awesome. My pack from HEB had two slabs in it and I figure it cost about $4/serving for everyone after sending some down the street to relatives who have no idea what's in store for them. The family went crazy for them too. Easy cook even for an offset noob like me to do. Thanks for the push to try these.
I'm pretty sure I've spent more at HEB in the last two months than I have at Home Depot. LOL!!!
Not true on that price anymore after watching this video I immediately went to Costco
They call them beef back ribs and they are selling for $20 a slab (4.29 lb) not worth the money versus the amount of meat now that it's $20 a slab vs. $7 in your video
Costco must have watched your video. Went to the McKinney, TX store today to grab one of these and they are now $22. Oh Well…🤷♂
Yep! Love these things….Sadly, they're a little difficult to find here in the UK.
I do enjoy removing the meat from the bones and membrane and making "Rib Fingers"; Quickly cooked they're brilliant.
The Bones and Membrane….Make the BEST Demi Glace.
Thanks to you Costco was out of ribs today. Thanks a lot!😢
Man got to love that Holy Gosple rub huge fan of it. It's fire on pork. Really like the Holy Cow too
In Canada, Quebec and Ontario that $7 pack of ribs costs over $70!! Crazy! nice one Bro, will try em your way. X
Awesome video as always Matt! I just did 3 racks of the exact same beef back ribs from Costco last Sunday. They turned put pretty dang good for my first time smoking them, but I really wish I had seen your video first – then I really would have been even less mad at them lol 😂 For anyone who is still doubting how delicious beef back ribs can be, you have to try them out!
I cook these all the time. One of my favorite ways is when I get to the wrap stage, I will braise them in beef broth, red wine, and butter. Give it a go! 😎✌🏼💪🏼
Bought same rack at Costco in TN and they were $15.47
Also your pooch will love to naw on the bones ❤
I saw some at Winco Friday morning. I think I'm going back to grab a couple racks for the freezer. Heck yeah Matt.
I just like to watch your channel and imagine what it's like to eat real food
$7.23? That was a complete steal.
Oh no, I’ve been using these to make chilis and Italian meat sauces for years, now the price is going to go up!
I made these tonight and all I can say is that they were unbelievably good and so so so easy. Would have never thought to buy these. I will say that they were not that cheap for me. Similar sized racks for me were $20 a piece. My Costco did not have them out for sale whole so I think I got charged the cut price for a whole. Still I can’t stress how good these were. The membrane is the only downfall.
Matt, today I did baby back ribs with a ghost pepper sauce binder + holy voodoo base + honey hog hot. And my own pepper jelly glaze in the wrap. They were incredible.
This will sound dumb. But a while ago, I found your channel after getting a pack of pork spare ribs out of the clearance case, because that's what we used to eat out of. Now, a year and change later, out of a real bad relationship and real bad spot in life, I have made many of your recipes. My pellet grill was literally the first thing I bought when I got free. It sounds silly because it is, but this last year you helped me rediscover my passion for cooking, and in that, I found a lot of healing, a lot of independence. My waistline doesn't thank you, but I do. Cheers.
Wow I just took the bones off my rib roast. Great timing for me. And I used the holy gospel. I’m letting in set until tomorrow the it gets smoked.
Matt. I just want to thank you for your videos. I got me an electric smoker with wood chips last year. I was unsure how I would do with smoking meats. Now I’m addicted. I just upgraded to a pellet smoker. Excited to smoke some pork and brisket on it with holy cow and gospel rubs.
Awesome!
Are you able to package your spices and rubs in small batches yourself or do you have a company package for you? Can you package at home in an NSF safe area without getting FDA approval?
Matt! I don't know what I'd do without you! Your easy and awesome videos have made me a hero to my wife and friends! Ty so much and please keep doing what you do!
Matt – me being a Californian where plate ribs are hard to come by, we appreciate you immensely!!
Who said bbq had to be expensive?? lol, great cook!
More tender than your mothers love😂😂😂
Go Dallas stars!!!
Use to buy mine off Amazon then realized buying from the church and having them sent to Hawaii wasn’t as expensive as most are(thanks Matt) but literally even coming to Oahu they are still so fresh and I even still get them within a couple days
I love beef back ribs and I like to do them more sort of direct…they taste like steak and have a more firm texture. High above the coals and let the fat drip into the fire…so good
That Whomp Sauce is the real deal!! Great video for beef back ribs.
I’ve been doing your Dino ribs with Costco ribs forever I’ll do this now thx Matt
Matt, your channel never disappoints!
I saw these ribs when I was at Costco last week! Was curious on how to cook & now I have guidance. Thanks for another great video, Matt!!!
