Beef Ribs. The Texas BBQ that made me fall in love with BBQ after growing up on sweet, pork BBQ in the south. These are the King of all BBQ for me.
When you are eating BBQ in Texas you are typically eating what is known as short ribs or plate ribs. AKA 123A or 3 bone beef ribs which are trimmed from the mid-section of ribs 6 through 8. This cut can sometimes be difficult to find outside of a butcher shop.
A good alternative are 130 beef chuck short ribs, aka 4 bone beef ribs which originate from the mid-section of ribs 2 through 5. These are easily found at grocery stores or Costco or just ask your butcher.

Looks pretty good.
Picked up some of these from 44steaks. Cooking them tomorrow but I can tell you this much, they ship on the small side. Advertised at 6-10lbs per order. I got almost exactly 6 on 2 orders, so the bare minimum. That's a big spread and smaller ribs are harder to cook. No great way to contact them, either. I guess it's in the range, even though one was actually 2.75lbs…but I cant see buying again.
Everytime i go out for bbq everyone gets pork ribs and i get beef ribs and they're always jealous
But you aint lying beef brontasaurus rib is king , i remember paying 30 dollars for 1 and was like shit it was expensive. I took my first bite and it was like heaven

The oooonly thing I can disagree on is the wood choice. In my part of Texas, Northwest Central, mesquite is king mainly because it’s literally everywhere around us.

Tough to beat what you have delivered. My beef ribs are crusty good on the outside and kinda sorta soft and chewy when I cut into the meat. Maybe I need to spritz em every hour or so, rather than after 3 hours. Thanks for the video.

Jesus took the punishment we deserve on the cross (1 Peter 2:24). If we believe and put our trust in Him, we too can have eternal life in heaven (Acts 16:31). Repent (which means turn from your sins and not live the life of a hypocrite) and TRUST Jesus today!

do you recommend adding butter and brown sugar? I recall you doing that when you cooked pork ribs.
Try this. just test it… prepare and Smoke the ribs like you normally would but when they hit 140, wrap for an hour until they hit the stall (around 170-175 usually) then believe it or not.. unwrap, spritz, and let them ride up to 205 (spritz every 10 degrees). wrap at 205 and then let them get to 210 on the smoker after wrapping a second time. pull off the wrapped up ribs at 210. place directly in your warmer or oven (set to 150) and let rest for 6 hours. if you use a cooler to rest then place it in the cooler and let rest for 1 hour minimum. it's a double wrap method using one wrap for the middle of the cook and the second wrap used at the end and the last wrap becomes what the meat rests in. take it a step further and in the middle of the two times your wrap, add some very thin bbq sauce mixed with beef talo.
