Ingredients:
For Kababs:
500g ground beef (boneless, lean)
1/2 cup chana dal (split Bengal gram), soaked for 1 hour
1 medium onion, chopped
6–8 garlic cloves
1-inch piece ginger
3–4 green chilies
1 tsp cumin seeds
1/2 tsp black peppercorns
1 tsp coriander seeds
1/2 tsp red chili powder
1/2 tsp turmeric powder
1 cup water (for boiling)
1/2 tsp garam masala powder
1/4 cup chopped fresh coriander leaves
1/4 cup chopped fresh mint leaves (optional)
For Binding & Coating:
1 large egg
Bread crumbs (optional, for extra crispiness)
Oil for shallow frying
Instructions:
Step 1: Prepare the Mixture
1. In a pot, add the beef, chana dal, chopped onion, garlic, ginger, green chilies, cumin seeds, black peppercorns, coriander seeds, red chili powder, turmeric powder, and salt.
2. Pour in the water and mix everything well.
3. Cook over medium heat until the meat and lentils are fully cooked, and all the water has evaporated. Stir occasionally to prevent burning.
4. Once cooked, let the mixture cool slightly, then grind it into a smooth paste using a food processor.
Step 2: Form the Patties
1. To the ground mixture, add garam masala, fresh coriander leaves, and mint leaves. Mix well.
2. Take a small portion of the mixture and shape it into round, flat patties (tikki).
3. If the mixture feels too dry, add an egg as a binding agent.
Step 3: Fry the Tikkis
1. Heat a few tablespoons of oil in a frying pan over medium heat.
2. Beat the egg in a small bowl. Dip each patty in the egg (and breadcrumbs, if desired), then place it in the pan.
3. Fry the tikkis until golden brown and crisp on both sides, about 2-3 minutes per side.
Step 4: Serve
1. Remove the tikkis from the pan and place them on a paper towel to absorb any excess oil.
2. Serve hot with green chutney, yogurt, or raita.
