Is there a reason you added the granulated garlic near the end? From my experience, adding it near the beginning helps the grains get enough time to absorb moisture and 'bloom' to allow the flavor to permeat more of the sauce. Im an amateur when it comes to food and cooking in general, so i could be wrong, but id love to hear your thoughts on it!

It’s not actually aioli if it uses mayo. That’s just mayo. Aioli is just garlic and oil no eggs.
It's not an aoili. mayo and aoili are completely different. Mayo is egg based, and aoili is made from straight olive oil and garlic, no egg.
