It has a pungent aroma, a savoury and umami flavour, and is high in protein and amino acids, which the human body need. Better than Normal Fried Chicken! Crispy Nam Yu Wings 南乳豆腐炸鸡翅 Chinese Red Fermented Tofu Chicken Wing Recipe
Ingredients:
Makes about 20 wings

2kg chicken wings
3 red fermented tofu
2 tablespoons of red fermented tofu sauce
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 tablespoon young ginger juice
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
5 cloves of lightly smashed garlic
2 teaspoons sugar
A few dashes of white pepper
2 tablespoons rice flour
5 tablespoons corn flour

2 questions. Can I not use fermented tofu? Secondly, should I be using an air fryer, when I put the chicken wing in the second time, is it still at 180 degrees and for how many minutes?
