I throw all the ingredients in a bowl, no weighing. Mix then together real quick, slap on a lid, and let it set over night. Next morning or afternoon, i bake in my dutch oven.

Bread has been made for centuries using simple tools and techniques. You don't have to be a perfectionist about it to get good bread.
