SYDNEY, AUSTRALIA – We’re going to the fish market to get a Huge Tasmanian King Crab and Chef Dan Hong is going to cook it 3 ways!

Sydney Fish Market (https://goo.gl/maps/khNKtN7KUUGPv2xs5) – After meeting up with Chef Dan, we met up with Alex from the Sydney Fish market who showed us around and gave us a very interesting brief about the Sydney Fish market and the quality of seafood that auctioned.

Red Claw Seafoods (https://redclawseafoods.com.au/) – At the fish market we visited Red Claw Seafood who specialize in some of the best live seafood in all of Australia and where Chef Dan gets his supply. We were after their insanely huge Tasmanian king crab!

Mr. Wong (https://goo.gl/maps/mcoC3PUG2GCL9Vq48) – After getting our crab, we headed back to Chef Dan’s restaurant, Mr. Wong, for some dim sum, roast duck, and mostly importantly, the fresh giant Tasmanian King Crab! It was without a double one of the best crabs, both in natural product and preparation that I’ve ever had. It was so big, Chef Dan had to cook three different dishes with it.

  1. These creatures, as well as other filter feeders , clean the ocean, from the sands at the bottom, to the coral , to the aquatic plants, to the rocks of the ocean. Eating them constantly is the reason the oceans aren't as clean as they used to be . These animals are trash and cause inflammation in the body the older you get . They eat pollution. Crabs , lobster, shrimp, oysters, clams , barnacles, snails, and many more play their part in cleaning the oceans. Ignoring this warning only makes things worse.

  2. I'm no environmentalist.. but I am curious; do you ever feel bad eating something this spectacular? You guys kept using the word "species" which reminded me of the movie "the freshman" staring Matthew Broderick and Marlon Brando. They had a special dinner club where the only goal was to eat one of, if not THE last of a given species. Im struck by the idea that 100,000 pounds of seafood have come into that facility… and then I wonder how much just gets thrown away?… Incidentally; yes, I would LOVE to see what this tastes like. I would still feel bad.

  3. when I was a young bloke in the merchant navy the ship ran from Port kembla to Strahan TAS. We had an arrangement the the lobster fishos if they coaght any of these giant crabs to wave us down when we left Strahan and headed northd stop and we swapped beer for a couple of crabs (which incidently would cling to the lobster pots as the fihos were pulling them on board)
    I remember trying to get the crabs into the copper in the ships laundry to cook them. JAYSUS!
    It was 1967/68. The ship POOLTA was the last ship to leave or enter Strahan

  4. As an Aussie I’m seriously disappointed.

    You went to some cool places you didn’t get anywhere near real Aboriginal food. Not even close.

    Go to the Northern Territory or ask your mate from Best Ever food review. If you had done a bit of both your approaches you would have got Aussie food.

    You just had the fancy stuff and the fake American stuff.

  5. I have never watched you but your face and lips look really pale as if you're sick? Did any of the seafood make u I'll or do u just look pale and sickly? Not being rude am wondering. That nick kratz dude caught a lobster and he ate it and it had a parasite in it and got a tape worm to
