What could be more pinoy than Binagoongang Baboy. I tried looking for similar versions from other South East Asian countries, but there’s nothing like it. The dish requires stewing pork in shrimp paste, and the result is a hearty, meaty dish that is perfect with hot, steamy rice. The version I like best is where pork fat is drawn out in the stewing process and marries the funky aroma and taste of the bagoong alamang that Filipinos love. I am now tempted to eat with my hands as I write this and pair this dish with steamed eggplant, okra, or even fresh green mangoes.
