  1. I tried this today. Used a blend of beans and a combo of pea shoots and baby lettuce. It was really tasty! I bet using plums or nectarines would be good too. I would also use apples and walnuts in the fall.

  2. what a great salad, especially where we are with our Colorado Palisades peaches. BUT, could you or anyone suggest another appropriate bean substitute other than blackeye peas? None of us care for the texture or the taste. (not garbanzo for same reason!) Thanks so much!

  3. Julia my love, do you ever have a salad without dressing? I would not be a great guest at your lovely home if you put dressing on any/all salad(s). I love greens…, lettuce, cucumbers and 'matas' (tomatoes) without a drop of covering. Salt and pepper and maybe some other spices are all I require for my salad. Maybe some veg or canola oil… However, this salad looks very interesting.
