America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

Outdated! Glass is familiar but very inefficient. Looking at the bottom crust? Not really. Even the disposable pie plates are better
they come in various sizes as well.
Aluminum disposable pie plate is the Ideal one to use for pie shop businesses. They are surely won't have to try to collect back the glass or ceramic pie plates
Nope, it's not good. They Explode when there is a change of temperature when taken out of oven.
I tried using Pyrex glassware to bake a pie.. and it did not evenly bake.. the middle of the pie was not cooked. Top and sides were overcooked. I even reduced the heat 25°.
How to take out your pie from the ceramic or metal tin into the aluminum Tin for distribution?
Now you can try a Lodge cast iron pie plate.
I've been cooking pies for more than 40 years in metal and ceramic pans, and I've never burned or even overcooked the bottom crust of a pie. THE FOLKS AT ATK must not know how to cook.
Glass can shatter. Plus it does not look good. Better is cast iron or ceramic.
Useless video. I didn't see you test anything or even show an example. I'm supposed to take your advice just because you said to? Don't waste my time. (I've seen other videos showing how to get good results with the cheap disposables)

I just watched a video presented by Dan Souza today (07/30/2014) and I must say that Dan came a long way. In this video he is like a young hippie-ish talking 'cheffy dude', where as the latest video (Science: Cooking Frozen Steaks), he is more……… a Chef. Either way, it made me giggle a little, because he is a cool as heck and! Yes, I love that his glasses may be different, but they are EXACTLY the same style. Love the videos! Keep up the great work, ATK! And shout out to Dan! 😉
Why didn't you guys review real metal pans?
Could u tell me the temp. or timing variation when baking in ceramic dish vs non stick metal pan..
