  1. The jewel in the crown of french fish dishes. Had one in Marseille years ago and I still think about it today, one of the few times that I didn't care about being rude, I licked the bowl dry at the end of the meal. My wife was really cross with my embarrassing behaviour. But the chef came out after and shook my hand because the waiter had seen what I'd done 😂

  2. Inspired to give it a try. I was able to collect some top shelf trimmings from the fish monger which was a treat. Overall it was straight forward to follow and the result was outstanding. Can't wait for the leftovers tomorrow. Thanks for sharing your passion. Will try the potato recipe next. Cheers
