Baby back ribs smoked with oak barrel staves and glazed with a delicious bourbon bbq sauce.
Baby back ribs are one of my favorite things to smoke. They are certainly something I grew up loving. I’ve also made the finals at the Memphis in May World Championship cooking back back ribs while partnered with my buddy Curtis Nations, so they are near and dear to my heart!

Coming from South Carolina there's nothing like great barbecue. I personally like a saucy rib. And sauce is not sauce without the taste of that sweet bourbon. But that's just me.
How was the aroma from the bourbon barrel oak wood as you were smoking the ribs? Did you get a good smokey flavor on the ribs. The ribs looked fantastic!
I haven't been to church regularly in years but since joining the meat church my grilling has never been better. love the rubs and videos, and I'm definitely getting an offset smoker real soon.

Matt, I’ve already commented on this video and appreciate your presentation style. Would you address how you handle “the stall” when you’re smoking meats? I’ve always heard you cook to looks before wrapping, but what happens if it stalls before you like how it looks?

Looks great! Is there a spot on your website that has the descriptions for each rub the way Matt describes them on these videos? It would be super helpful! For example, when he uses Dia- he says "salt, pepper, garlic, onion, and little bit of citrus", but on the label of ingredients it says, "Salt, spices, dehydrated garlic & onion, lemon juice powder, spice extractives, papain, bromelain. Gluten Free. No MSG." So no mention of pepper, and thats true in how he describes other rubs on the YouTube channel vs. what is in the ingredients. It would be awesome to have a simple chart with what the main flavors are in each rub the way he describes them vs. what is listed in the ingredients. Thanks!!
