Ingredients

750g pork belly, cut into chunks
1 handful black fungus (wood ear), soak in warm water about 1 hr
1 whole garlic, peel and chop
4 star anise
3 C water

Marinade

1 tsp sugar
1/2 tsp pepper powder
1/2 tsp 5-spice powder
1 egg, lightly beaten
1 pc red fermented bean curd (reddish cheese)
1 Tbsp oyster sauce
4 Tbsp corn starch

Seasoning

2 pcs red fermented bean curd 2 Tbsp sugar
1/2 tsp 5-spice powder
1/2 tsp pepper powder
1 Tbsp soya sauce
1 Tbsp oyster sauce
3 Tbsp Shaoxing wine
