Breakfast potatoes are my favorite meal to eat in the morning. They can be prepared with just about anything you have in the refrigerator. I had some strips of beef leftover from a different meal that I incorporated into this meal. Total prep and cook time is approximately 25 minutes.

Ingredients:
I. Potatoes
II. Red onion
III. Jalapeno
IV. Bell pepper
V. Mushrooms
VI. Beef (or meat of choice)
VII. Tomatoes
VIII. Eggs
IX. Butter or Ghee
X. Cooking oil
XI. Salt & Pepper
