La recette originale, française , normalement se réalise avec de la farine forte, (entre 12 et 14% de protéines) pour mieux supporter la grande quantité d'oeufs et de beurre et sucre de la recette . Et la vraie recette de boulanger ne contient absolument pas de lait. Quoi qu'il y a certaines recettes qui y contiennent…

  2. Salt should always be measured by weight, and since you have a scale already out, I don't know why you didn't do this. I tend to use sea salt (from Mexico), and it is somewhere between Kosher salt and table salt in grain size. When measuring by weight, I can be sure I am using the right amount. I use a jewelry scale for measuring small amounts, like salt and yeast.
