OK, so I’m sitting here eating dinner and YouTube algorithm gave me this video and the fact that I just saw possibly one of the best mac & cheese with brisket that I’ve ever seen not only did I not finish what I was eating because I was angry at the fact that I had what I had, but the potential of what I could be eating made me so upset that I had to make this comment. Oh it’s not a positive comment I am pissed that I cannot eat what I just saw.

I'd suggest adding asadero to that mix as well. Note if you try it's at a similar melting status as the mozzarella.

Just because something takes longer to prepare, does not mean it will taste better to someone than a dish that is quicker to prepare. It's perfectly reasonable for someone to really be into some simple mac and cheese. Like, yeah, it's noodles and cheese sauce. That's pretty delicious. Simple =/= bad. It's fine if you yourself aren't super into pasta, but billions of people are. You don't need to feel rubbed the wrong way just because someone else enjoys something more than you do. I myself, will always take a pasta based meat dish over just a plain cut of meat. Adding pasta to a slab of meat will just about always improve it for me. It's nothing personal.
