  1. Sopes are a traditional Mexican street food made with a thick, fried masa base and a raised edge to hold all the toppings. I’ve had them a bunch of different ways but never with brisket 🤯. So for Cinco de Mayo, I figured why not give this classic a BBQ twist? I even smoked the sope with refried beans. I didn’t make the sopes masa base from scratch, but I grabbed them fresh from my local Mexican market where they make them in-house @cardenasmarkets 👌🏽

    Pickled Red Onions:
    • 1 whole red onion sliced thinly
    • 1 tbsp whole peppercorns
    • 1 tbsp kosher salt
    • 1 tbsp granulated sugar
    • 1/2 cup apple cider vinegar
    • Hot water
    • 2 tbsp @bearandburtons Special Reserve Everyday Hot Sauce

    Toppings:
    • Refried beans
    • Chopped brisket
    • Pickled red onions
    • @bearandburtons Special Reserve Everyday Hot Sauce
    • Shredded lettuce
    • Mexican crema
    • Cotija cheese

    𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨:
    • Add all ingredients for pickled red onions into a container and let sit for 2hrs.
    • Add refried beans to sope and smoke at 225F for 30min.
    • Chop brisket then add BBQ rub and mix.
    • Add toppings and enjoy.
