Either you arent boiling long enough or its not enough sugar because sugar makes a substantial difference when I boil it with corn.
You're right about the myth that fresh corn must be eaten the day that it's picked. However, the BEST corn I've ever eaten was right off the stalks in my garden. Eaten raw, they taste as sweet as candy.
I love eating corn and we use to grow it when I was living with my grandparents. We raised both sweet corn and field corn and I loved eating both types. Thanks for sharing that tip, and I love watching the program on PBS on a daily basis.
What about human bodies can't break down corn? Is that also a myth?

I drop the corn into boiling water~~ cover~~ turn heat off instantly then let rest in the water for 3 minutes. It’s a perfectly cooked cob!!! Footnote: The corn comes easily off the cob but has a crunch. Leave longer for softer kernels~~try my method first however, I know you’ll love it 🌽🌽🌽
I prefer to microwave my corn. It tastes much better that way.
How long boil?

My Uncle Syd (eccentric) grew corn, and insisted, you waited to pick it until the water was boiling in the pot, and if you dropped an ear on the way back to the kitchen (at a run!), you did NOT stop to pick up that ear!
Best corn is raw on the cob. Not boiled. Give it a try if you take the lap to try you will be happy you did

Season at the table? Wow. I’ve wasted a lot of milk and salt. I just made corn last week, too! Tsk tsk.
I take the corn with the husk, and cut the bottom off, then throw it in the microwave for 4 minutes. Then let cool a bit, and squeeze the corn from top to bottom and it just pops right out

Becky Hayes did a corn demo on ATK recently. Bring pot of water to a boil. Put husked corn into pot. Cover it and turn off fire. Let it steep for 15 minutes. Works every time!

Throwing corn in the oven, husk and all, makes for way better tasting corn. I’ll put it in there at 375 for about 20 minutes. Beats boiling all day.
You could also note that modern sweet corn dosen't need "cooked" per-se, it's already very tender off the plant. You can coil for a min or microwave in wet paper towel to warm the corn enough for butter to melt on it though!
