The Origin of Tandoori Chicken: Before 1947, Gujral worked at a restaurant in Peshawar called Moti Mahal, where he experimented with cooking chicken in a tandoor (clay oven).
Post-Partition Delhi: After moving to Delhi, he established the famous Moti Mahal restaurant in Daryaganj, which became a hotspot for famous patrons like Jawaharlal Nehru.
Invention of Butter Chicken: To prevent leftover tandoori chicken from drying out, Gujral created a sauce using tomatoes, cream, and butter, giving birth to the world-famous butter chicken.
The "Two Kundans" Dispute: The invention of butter chicken is contested between the family of Kundan Lal Gujral and the family of his former partner, Kundan Lal Jaggi (of Daryaganj restaurants), resulting in a legal battle over the, "inventor" title.
Legacy: Despite the disputes, his legacy continues through the Moti Mahal Delux chain, now run by his grandson, Monish Gujral.
