Cajun Shrimp and Arugula Pesto on Penne:
¼ cup onion
5 -7 shrimp
Some Cajun seasoning
1 cup penne pasta cooked
1 – 2 Tbls of Arugula Pesto
1 Tbls. Extra virgin olive oil
Arugula Pesto:
One cup arugula
2 cloves of garlic
½ Tbl salt
1/4 cup sunflower seeds
1/4 parmesan cheese
2 Tbls extra virgin olive oil
Mix everything in a food processor
In this video we make Cajun shrimp with arugula pesto on penne. I am a huge fan of arugula and this pesto is the best. The sunflower seeds add an amazing flavor and texture to the dish. If you only make one of my recipes this is the one to make! You can make it vegetarian by dropping the shrimp; this is how my wife eats it. This is also a great way to use up the bitter arugula leaves that you let get to big in your garden. Thanks for watching!

Thanks, Joanne! I am arugula’s #1 fan. I try to work it into everything. Plus, it’s the only green thing my 3 year old will eat. We are growing some in the laundry room under lights. 🙂 We actually grew the arugula in the video together.

Cheeky, I believe you Aussie's call it rocket. A few other names for arugula are rugola, rucola, roquette, garden rocket, Mediterranean rocket. It has a spicy nutty flavor that I love!

This looks delicious…I used to order something similar like this at a restaurant by my house. The only thing didn't like about it was that when I was almost done there will be a pool of oil at the bottom but this one looks much healthier.
