  1. i use a pit boss pellet oven that has a slidable shield. main grates are close to the fire box; there is a top rack but rarely use it. either i sear first then set aside to fully get to temp and then kiss it with fire on the finish; or reverse smoke then sear method. depends on the type of meat. For pork steaks I will sear then turn temp down and slide plate over fire box for smoke then open and keep lid open and crank the temp to 400 and finish sear i like some crispiness.

  2. As an owner of a pitt boss grill, I am wishing I would have got a pellet grill with the fire box on the side like the one you use instead of in the middle. Love the convenience, but not paying 3k on a traeger. Cheap Pitt Boss and a great weber kettle until i can learn and purchase a good offset.

  3. I’m curious if running a wwp with the valve open and a lot of wood would get the drip tray hot enough to vaporize the drippings like flavorizer bars do in a gas grill. You still won’t get the direct heat crust and such but might get more drippings flavor. I usually run mine with a couple extra baffles to prevent direct heat and force it more over the top (I have a Santa Maria for direct heat grilling) but I might try it next time.

  4. Brad, get some RESCUE! Outdoor Disposable Hanging Fly Traps. You will kill them by the thousands….yes thousands. It will be the grossest biology experiment you have ever seen. Bones eats something gross!

    I didn't intend on buying a Thermapen this month, actually intended next month. But thanks for the partnership (first time I'm ever saying that but I'm being honest) 'cause I actually did need one (last pieces of jank bullshit died last month, every time I've been cooking for a month been using a fuckin' 1980s era ass thermo, and was going "I'll wait till next credit card month to buy a thermapen, actually spend more money, but get something with universal acclaim that fuckin' *works*").

    So, yeah. New Thermapen on the way 😀

  6. I would LOVE to see Brad get his hands on a drum! With a temp controller you get as convenient as a pellet grill, but with actual fat dripping direct heat flavor. I know that drums are competition to his Chud Box so it probably won’t happen. Still would be interesting to see.

  7. Brad, you should try the Knottywood Almondwood pellets. I really enjoy them and found the flavor and smoke they give off to be really great! Definitely gonna try these steaks for sure. Love me a good pork steak!!
