  1. I was just watching this year-old video, enjoying it thoroughly, when I hear my username and an old comment of mine in the video. I apologize for the lightbulb comment—I shouldn’t joke about such matters. I have since learned better. Lightbulb ceviche is the only way to go.

  2. It baffles me there are people who don't like dan??? Dan is the reason ATK was on my radar in the first place; I think about the rice and mushroom and brussel sprout and other videos every time I cook dishes with those ingredients 😀 I remember feeling so PUMPED finding Dan's food science videos with actual science (that was simultaneously accessible) when being very frustrated with the more popular "food science" series on the Everyday Food channel. Keep Dan at all costs!

  4. If the salsa is part of a warm dish, e.g. asado de puerco, a poco stew, etc., you can toss in some squash and remove after a while. That will bring down the heat. I believe leaving raw squash in a cold salsa overnight might have the same effect, but I haven't tried it yet, though.

  5. Dan, I apologize for saying that! But sometimes you have a lack of energy which drains those who are watching the show. Scientifically speaking you’ve got a lot going on! And you really should teach your work cohorts there that there is no heat in the seeds of a pepper! If I said it about two dozen times.

  6. So speaking of spicy and cold, I once had a meal that was so spicy I had probably a gallon of ice water. I was simultaneously shivering because my core temps were low, and sweating excessively because the spiciness. It's a terribly unique feeling 😜
