Today I make my version of some direct heat pork belly stuffed Carolina Twinkies! These were smoky, porky, creamy, and bacon wrapped. The direct heat bbq flavor with the mop sauce flavor really comes through! It is an easy straightforward cook, with fantastic results. Perfect football game, tailgate snack.   1. Cheese leaking is a real thing. Worst is when they cut the end off and pipe the filling. You take a bite or cut into the pepper and it squirts out. I find cutting in half long ways then stuff,wrap, smoke/cook i don't have that problem 🤷🏽‍♂️

  2. Great recipe, lots of ingredients though, that said I'd try to give it a go, it looked so tasty 🥰. Thank you for the video.
    Just be careful with your taste tester, dogs should not eat onions because they are highly toxic and can cause a life-threatening condition called haemolytic anaemia. This is not a criticism just me passing on what I know, please look for yourself. I adore the relationship you have with your beautiful dog (blue heeler, but I could be mistaken). Thanks Brad 🤩.

  3. I don’t know that it’s a Twinkie, and it’s definitely not barbecue,

    But I was feeling frisky one night and basically threw a jambalaya recipe into a stuffed pepper recipe and that was a very good choice.

    So, do with that what you want.

  4. Also you can use Pork Shoulder bone-in (which I'm sure you know) I'm from South Carolina and thats our go to backyard BBQ muscle for Pulled Pork. But what you made looks delicious! Oh and I now live in Austin, so I'm going to have to try this for sure!
