  1. Nut Cheesecake (No-Bake)

    Crust Ingredients:
    1/2 cup dates
    1 pinch of salt
    1 cup nuts (almonds, walnuts) – you can use 2/3 cup if the mold is small

    Filling:
    1.5 cups cashews (soaked for 4 hours)
    1/2 cup coconut milk
    1/4 cup lemon juice
    3 tablespoons honey or another sweetener
    1 teaspoon vanilla extract

    Instructions:
    1. Blend the dates and nuts in a food processor, then press the mixture into a mold.
    2. In a blender, mix the cashews, coconut milk, honey, lemon juice, and vanilla until smooth.
    3. Pour the cream over the crust and freeze for 4–5 hours.
