2 lbs beef chuck roast, boneless
Salt :
Ground pepper :
1/2 ea white onion
1 head of garlic, slice end off
2-3 ea bay leaves :
1/2 bunch cilantro
8 cups of water

→ Chipotle salsa
1 lb tomatoes, quartered 
1/4 white onion, roughly diced 
4 ea garlic cloves, unpeeled 
Drizzle  of oil
✻ Blender ✻
2-4 ea chipotles (in adobo) :
2 TBSP adobo sauce 
Salt to taste

→ Beef Filling
3 TBSP oil :
1/2 onion, diced
4 ea garlic cloves, minced
2 tsp ground guajillo :
1 tsp ground ancho chile :
1/2 tsp ground cumin :
6 oz tomato, diced (1 vine ripe)
Salt to taste (1 tsp kosher)

8-12 oz queso Oaxaca, shredded
26 corn tortillas
Oil for frying
Toothpicks

  1. My wife and I lived in Guanajuato City for a year. We both fell in love with Mexican food. Taco Hell is not Mexican! We both have high blood pressure, so we reduce the salt in the recipe and go easy on the garlic ( a little bit goes a long way ). Both of you take care, I'm going to the kitchen now, because I'm hungry.

  2. There is an empty house next to me. You could have that residence and I would have a beautiful cook that can put on quite a feast. I love your cooking and also the fact that you care about the people with diabetes which I have as well and you’re always looking on a way to perfect the food so that we can enjoy it too and I actually really love all of the Mexican cuisine. It is wonderful, wish you were my neighbor I would probably never go home. Haha 😂
