Juicyness has nothing to do with boneless/bone-in. Temperature is pretty much the only variable that matters.

Sous vide look for a used like new on Marketplace. Got mine $200 one for $40. Also use zuplock bags. There's a trick to getting the air all out. Then sous vide in a pot with water. Don't need a cambro.
I mean… even if Sous-vide is supposed to be one of the greatest methods of keeping food juicy, I just can't get myself to do it with this amount of plastic waste every time you cook
