🍝 Cherry Tomato Spaghetti (Spaghetti al Pomodorini)

📝 Ingredients:

Spaghetti – 180g
Cherry tomatoes – 250g (halved)
Garlic – 3 cloves (thinly sliced)
Extra virgin olive oil – 3 tbsp
Fresh basil leaves – handful (torn)
Salt – to taste
Black pepper – to taste
Red chili flakes – ¼ tsp

🔪 Method:

1. Boil the pasta

In a large pot of salted boiling water, cook spaghetti until al dente. Reserve ½ cup pasta water. Drain the rest.

2. Sauté garlic & tomatoes

In a large pan, heat olive oil over medium heat.

Add sliced garlic and cook until just golden (don’t burn).

Add halved cherry tomatoes and sauté for 5–7 minutes until soft and blistered. Press some gently with a spoon to release juices.

3. Add seasoning

Add salt, pepper, and chili flakes (if using).

Stir in torn basil leaves.

4. Toss pasta

Add cooked spaghetti to the pan. Toss well to coat in the sauce.

Add a splash of pasta water to loosen it if needed.
