Chevalatta

Every summer our family makes enough sausage to last us through Christmas. We make a combination of hot Italian, sweet Italian, chevalatta, and chicken sausage. We grind up a few pork butts, season them, and stuff them into the casings. Then we freeze them in packs of 6 so they’re ready for sausage and peppers or Sunday sauce.
It seems like it could be a ton of work, but you can have the butcher cut all the meat. It’s a great way to get the entire family involved in cooking. We’ve had so many great memories doing this, and I can’t wait to get my kids involved. @vindelgiudice
