Disability-friendly adobo and garlic rice
Chicken Adobo
2 lb chicken
Adobo sauce
1 tsp dehydrated minced garlic
1/2 tsp black peppercorns
2 bay leaves
Add all ingredients to crockpot. Cook on high for 4 hours or on low for 6 hours. While it cooks, prepare the garlic rice.
Garlic Rice
1 1/3 cup rice*
1 tsp dehydrated minced garlic
1/2 tsp salt
2 tbs oil
2 cups water, room temperature**
Add the rice to the a microwave-safe container that is at least 1.5 quarts or 6 cups in capacity.
Disability-Friendly Wash Method:
Wash rice by filling container with room temperature water, swirl the rice so that loose starch, any bugs, and/or damaged grains will float to the top. Let container sit under a gentle stream of water for about 2 minutes. Ideally the container will be at a slight angle to better facilitate the flow-in, flow-out method, but it is not essential. Feel free to rest during this two minutes.
Pour the wash water off of the rice. Add garlic, salt, oil, and 2 cups of room temperature water. Cover with microwave-safe plate or any microwave-safe, loose-fitting lid. Place in microwave and cook for 5 minutes on high. Do not open microwave.
Cook for an additional 12 minutes at 30% power. Do not open microwave. After the cook time, allow the rice to sit in the microwave unbothered for 10 minutes.
Fluff and serve.
Notes:
*This recipe was developed with long grain white rice. Other varieties of rice may have slightly different water requirements.
**If you must use cold water, increase the time on high by 1 minute. The texture will be best with room temperature water.

there’s a Chamorro version of this…1:1:4 white vinegar, soy sauce and water. Huck it into a pot with a lot of garlic and onion. Let cook for a couple hours, serve over rice

Btw the marinade can be substituted, just use equal parts soy sauce and vinegar, mix both in a bowl so it’s easier.
