Chicken and Sausage Gumbo

This gumbo recipe is “Leveled-Up” with chicken, andouille and of course, plenty of Sweet Smokey Joe’s Creole Kick 😋. It’s the perfect winter comfort dish that’s loaded with flavor🙌! Check out the video for the full instructions, and make sure to Like, Comment, and Subscribe!

1 tsp. Olive Oil
1 lb. Chicken Thighs chopped – (or chicken breast )
Kosher Salt and Black Pepper (to taste)
12 oz. Andouille (sliced into ¼ inch slices)
½ cp. Vegetable Oil (or Peanut Oil)
½ cp. Flour
1 medium Bell pepper chopped
1 medium Onion chopped
1 medium Celery Stalk chopped
3 cloves Garlic chopped
1 cp. Okra (I used frozen)
2 tbsp. Cajun Seasoning (or more to taste)
6 cps. Chicken Stock
3 Bay Leaves
4 tbsps. chopped Parsley + more for serving
1 tbsps. Filé powder (or to taste)
Cooked White Rice (to serve)

  1. Gonna make this today! It’s raining and cold so this is so perfect for today 😊 I’m gonna do 2 separate pots for my man and I. I’m gonna use andouille and I’m gonna make him a beef sausage one

    Update: MAN THIS IS ONE OF THE BEST THINGS I’VE COOKED!!😩 whew this recipe is bomb 10/10 my man loved his with the beef sausage and both were delicious!!

  2. Tell you a secret….. It's always best to use frozen okra because if you don't know how to de-slime fresh okra, then you will have a slimy gumbo. All companies put frozen okra into a de-sliming process, so when you use it, it's a far different outcome in your gumbo.

  3. Phenomenal recipe and instructions. I have wanted to try making Gumbo for years, but was intimidated by the threat of burning the roux.
    Thanks to AB I felt like I had a great understanding of the entire process of preparing a gumbo.
    With the video playing on my laptop for inspiration and the mantra of “Ima’ make it do what it do” in my head I went in with confidence. The result was a damn good gumbo that I was so proud to serve.
