Ingredients for Tawa Chicken Fry:

Chicken, boneless pieces cut into small chunks- 450-500 gms

– Ginger, chopped- 2 tsp heaped (10 gms)
– Garlic, chopped- 2 tsp heaped (14 gms )
– Tomato, thick slices- 2 medium (160 gms)
– Green Chillies, chopped- 3 nos.
– Coriander leaves, chopped- 4 tbsp

Powders:
– Turmeric Powder- 1/2 tsp
– Red Chilli Powder- 1 tsp
– Coriander Powder- 1 tsp
– Kashmiri Chilli powder -3/4 tsp
– Cumin Powder- 1/2 tsp
– Garam Masala Powder- 3/4 tsp

Other Ingredients:
– Kasuri Methi (Fenugreek Leaves), roasted and crushed- 1 tsp
– Ginger, julienned – 2 tbsp
– Salt- 1 tsp
– Oil- 3 tbsp
– Butter -2 tbsp

Preparation:

– Cut the boneless chicken into small bite sized chunks.
– Fine chop the ginger and garlic to be used for tempering and chop the coriander leaves & green chillies.
– Make thick slices of the tomatoes.
– Also take an inch of peeled ginger and cut them into julienne to be added at the end as garnish.
– Dry roast the kasuri methi and crush it with your hand once cooled.

Process:

– Heat oil on a Tawa or a pan and add the chopped ginger and garlic.
– Fry on low heat for a minute and add the chicken pieces.
– Mix and fry on high heat for 3-4 mins till chicken changes colour and water nearly dries up.
– Add all the spice powders (turmeric, red chilli, coriander, cumin and garam masala powder) and salt. Add a splash of water if required and fry on medium heat for 3 mins.
– Now add the tomato slices and cook on medium heat for around 2 mins.
– Now reduce heat to low and cook covered on low heat initially for 5 mins. Remove lid and give a stir. Continue cooking on low heat for another 5 mins till chicken is tender.
– Remove lid and add the Kasuri Methi, julienned ginger and chopped green chillies. Give a mix for a minute and then add 2 tbsp of butter.
– Mix and fry on medium heat for another 2-3 mins till everythinf is combined well, the masala coats the chicken pieces well and the colour has darkened.
– Lastly add the chopped coriander leaves and fry for 1-2 mins on medium heat.
– Serve as a side or starter.
