CHOLE MURGH
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2-4
Ingredients
For Boiling Chole
2 Bay leaf, तेज़पत्ता
2-3 Cloves, लौंग
1 Black cardamom, बड़ी इलायची
1 tbsp Ghee, घी
150 gms Chicken, bones, चिकन की हड़िया
500 gms Chickpeas, soaked, छोले
Salt to taste, नमक स्वादअनुसार
Water, पानी
For Ginger Garlic paste
1 inch Ginger, peeled, slice, अदरक
4-5 Garlic cloves, लहसुन
2-3 Green chili, slit into half, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Marination
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
650 gms whole Chicken, (cut into big pieces) चिकन
1 tsp Oil, तेल
For Chole Murgh
1 tbsp Ghee, घी
1 tsp Oil, तेल
2 nos Green cardamom, हरी इलायची
1 Clove, लौंग
½ inch Cinnamon stick, दालचीनी
1 Bay leaf, तेज़पत्ता
2 large Onions, sliced, प्याज
Marinated Chicken, मैरिनेटेड चिकन
½ tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 ½ tbsp Curd, beaten, दही
Pressure Cook Chole, पके हुए छोले
Remaining Chole Water, उबले हुए छोले का पानी
½ tbsp Tender Coriander stem, finely chopped, धनिया के डंठल
½ inch Ginger, julienned, अदरक
2 Green chillies, broken into half, हरी मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
1 ½ tsp Prepared Masala, तैयार किया हुआ मसाला
For Masala
1 Bay leaf, तेजपत्ता
¼ inch Cinnamon stick, दालचीनी
15-20 Black peppercorns, काली मिर्च के दाने
4-5 Black cardamom, बड़ी इलायची
9-10 Green cardamom, हरी इलायची
½ tbsp Coriander seeds, धनिया के बीज
1 Mace, जावित्री
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक
Green chili, less spicy & slit, हरी मिर्च
Process
For Ginger garlic paste
In a mortar pestle, add ginger, garlic, green chillies, salt to taste and make a smooth paste.
Keep it aside for further use.
For Cooking Chole
In a pressure cooker, add bay leaf, cloves, ghee, chicken bones and saute for a while.
Add chickpeas, salt to taste, water as required and pressure cook for 4-5 whistles.
Keep it aside for further use.
For Masala
In a pan, add bay leaf, cinnamon stick, black peppercorns, black cardamom, green cardamom, coriander seeds, mace, salt to taste and dry roast it well.
Transfer it into a grinder jar and grind into a fine powder.
Keep it aside for further use.
For Chole Murgh
In a pan, add ghee or oil, green cardamom, cloves, cinnamon stick, bay leaf, onions and saute until golden in color.
Meanwhile strain the cooked chole and keep it aside.
Add marinated chicken, coriander powder, turmeric powder, degi red chili powder and let the masala cook well.
Add fresh tomato puree, curd, cooked chole, chole stock and let it cook for a while.
Add tender coriander stems, ginger juliennes, fresh coriander leaves and slow cook on medium flame for 15-20 mins or until chicken is tender.
Transfer it to a serving dish, garnish it with coriander sprig, ginger juliennes and green chillies.
Serve hot with Roti.

The best part about this dish is it's packed with protein and you don't need rice or bread or roti, coz the Chickpeas have enough carbs in em. Ppl trying to lose weight or in the fitness industries will never have to eat bland chicken and broccoli. Who said healthy food has to be boring
