This is a really great recipe. I love how you can do many variations. I can see this coming in handy for someone cooking for friends or relatives that are bringing guests because you just never know nowadays people's dietary restrictions or preferences.

I'm laughing so hard at myself! When I saw your question the other day, I read "Chicken Tortilla Soup" so I was a little surprised by the zucchini at first, but decided to just roll with it. Then the spices were all wrong, but I figured something was coming later. When you added the spinach, I still hadn't caught on and was REALLY puzzled. But I can't eat spinach and need to leave it out, so I shrugged and kept watching. When the tortellini made its appearance, the penny FINALLY dropped – tortellini, not tortilla. 🤣🤣🤣 My silly brain was so set on what it thought it knew, that every time you gave the name of the soup, it continued to hear what it wanted to! 🤪
Anyway, it looks delicious and I can't wait to give it a try! I need to either wait to get some tortellini. Though I do have some gnocchi that might do for now…
Thanks for the beautiful recipe! I freeze my soup in the Souper Cubes and just pop them out and into a freezer bag till I'm ready for more. So convenient!

Those look more like grape tomatoes. They are even more flavorful than cherry tomatoes in the off-season for regular-sized tomatoes, unless those happen to be heirloom of some type. Thanks so much for covering how to make/keep this vegan. I am getting so many good ideas & food storage tips from you for freezing portions and reheating and never wasting our leftovers.

This is a perfect recipe for our family. My kids are vegetarian, but my husband and I enjoy eating meat.
