  2. This is by far the easiest Chef Jean-Pierre recipe I have tried and it was absolutely delicious. My local fish market didn't have Chilean sea bass today but he had black cod. I shrugged my shoulders and said, "it's not rocket science, let's cook some fish and see what happens." It was amazing. I've never had red wine with fish (other than salmon) before but this simple beurre rouge sauce was out of this world. I'll be be going back to this dish many times. Thanks Chef!

  3. Thank you for the Tarragon herb use in the sauce. I grow that Herb in my garden in rural British Columbia Canada. This perennial plant survives very cold winter months and starts growing again with new green leaves in the middle of the month of May. By middle of September I harvest the large number of stems that remain and hang upside down to air dry inside the house. About two weeks later the dry leaves are pushed off and then those are stored in large glass jars with air tight sealing lids. Lasts me at least eight months until the next fresh herb stems are grown. Let the plant become bushy for the largest harvest quantity each year.

  4. "It's cooking! Have a glass of wine. Relax. Enjoy yourself." This. All of this. For me its more likely beer or whiskey, but the point remains. My favorite "TV" chef right now bar none.

  5. Sea bass is one of the 4 worst fish in the world. Eats fescues (poop from others and self) found in the dirtiest waters in the world. Choose a better fish (5 of the best fish to eat would be a great start)!
