Chimichurri is a Argentinian sauce made of fresh herbs, red wine vinegar and olive oil that is traditionally served along with grilled red meats such as steak. However, I have recently discovered that freshly made chimichurri is also delicious on grilled chicken. In this recipe, the chimichurri sauce pairs perfectly beautifully charred chicken that is cooked in a cast iron pan.

Looks amazing 🎉! Do you think this would be good with salmon????!!!!
hi im matt with meat church and im a douche bag
Thanks for the easy weeknight meals for the days where we don't have half a day to cook something
That looks like a winner Matt! No substitute for fresh scratch chimichurri, but I sometimes get lazy and use Al Frigoni's mix. It's pretty darn good in a pinch.
Chicken breast are better
Doing this next week. Great video Matt
Man "I Ain't Mad At That"! Great cook, thighs were absolutely was the right call. Thanks for the video
Matt, as always, looks like another killer recipe! I’m curious about your burner that you cooked the chicken in. Who makes it and where can I buy one? Looking forward to more videos this year! Thanks!
Looks delicious Matt!!
I agree, thighs are always the way to go. You have to mess up a cook big time for them to be dry, and nasty.
Damn no cilantro in the chimichurri?
Definitely going to give this a try !!!
looks good, but sleeves in your food bothers me
Nice work! Excited to try this
Doesnt the parsley get burnt and bitter by the time the chicken is done? I would have wiped off more of the herbs before sautéing?
Loving the weeknight meals lately.
Delish! You're creeping up on a million Matt. Let's go!!!!
Forgot the cilantro in the chimichurri
Thanks for sharing this with everyone.
We do these all the time. I haven’t done cast iron but either Santa Maria or direct barrel cooker
The leftover chimmichurri is killer over eggs. Definitely my favorite topping for steak and eggs
Nice Work. Looks Great.

Man….I will be making this in the next week or less. Outside of coals/smoke/fire – cast iron is my go-to. Using 3 different size Eries that originally belonged to my wife's grandmother's grandmother. Like late 1890's-1905. Crazy sh*t. Love the Blanco, MP. Becoming one of my favorite MCR's.
"Char is flavor" a statement I wish I learned when I was younger.
Awesome as usual!!! Let’s see your outdoor kitchen tour!!!
In before the stupid AI summary!
Damn man that looks so darn good
